DOTW – Coconut & Marmalade cookies

Món bánh đầu tiên sau khi cu Bin ra đời. Coconut & Marmalde Cookies. Ốm nằm bẹp dí bỏ 1 bữa học cooking vậy mà đến 3h lại mò dậy mở tủ lạnh kiếm xem có gì làm bánh ko? Còn 1 cục bơ, dừa và mứt cam.

Công thức mình lấy theo Strawberry Pinks:
makes about 30
225g butter, softened
140g caster sugar
1 egg yolk, lightly beaten
280gr plain flour
100gr coconut
4 tbsp strawberry jam (cái này ko có cũng dc vì ăn đỡ ngọt hơn)

– Preheat the oven to 190C. Put the butter and sugar in a bowl and mix well with a wooden spoon, then beat in the egg yolk. Sift together the flour and a pinch of salt into the mixture, add the coconut and stir until thoroughly combnined.
– Scoop up tablespoon of the mixture and roll them into balls. Put on the prepared baking sheets spaced well apart and use the handle of wooden spoon to male a hollow in the centre of each. Fill the hollows with strawberry jam.
– Bake for 12 – 15 minutes. Leave to cool on the baking sheets for 5-10 mins, then using a palette knife, carefully transfer the cookies to wire racks to cool completely.
